Ascorbyl palmitate is an ester formed from ascorbic acid and palmitic acid. Ascorbic acid is a sugar with anti-oxidant properties that occurs naturally in most fruits and vegetables, commonly known as vitamin C. Commercially it is synthesised by the bacterial fermentation of glucose, then followed by chemical oxidation.
